Fennel. View of the flowers and feathery leaves of the herb fennel (Foeniculum vulgare). The leaves and peeled stems of this herb are often added to salads, and the seeds have a sweet taste and may be used in desserts. It is also boiled with oily fish, as it increases their digestibility. It is a large plant, and grows wild around the European coasts of the Mediterranean Sea, although it is usually cultivated for culinary use. It has also found uses as a medicinal herb, with infusions being used to treat flatulence and other digestive disorders.
