Description
Fermentation air locks. Two forms of air locks used in fermentation equipment, attached to glass bottles (right). Air locks use water to prevent bacteria in the air from travelling into the bottle and contaminating the fermenting beer or wine. They are used instead of corks or stoppers as they still allow the release of gas, which can bubble out through the water. If the gas was unable to escape, the pressure would build up inside the bottle, which would eventually burst.
