Vegetables. Assortment of healthy, fresh vegetables that contain the chemical lutein. The selection includes (from left to right): spinach leaves, asparagus tips and broccoli. Lutein is a xanthophyll, a pigment found in plant leaves and egg yoke. It is thought to play a role in reducing the risk of age-related macular degeneration, the leading cause of visual impairment in the elderly.
