Traditional winemaking. Historical illustration of wine production. Trampling of grapes (pigeage, right) was carried out when making red wine to prevent the skins of the grapes from settling to the top as a 'cap'. The degree of contact with the skins as the juice ferments is a key factor in determining the flavour of the wine. Some producers still use foot trampling today. 15th century French illustration entitled Le Mois de Septembre" (The Month of September)."
