Bags of plain (left) and self-raising flour. Self-raising flour contains a chemical leavening agent such as baking powder (a blend of sodium hydrogen carbonate and a weak acid). When mixed into a dough, the leavening agent releases carbon dioxide, making the mixture less dense and providing a lighter baked product.
