Description
Distillery. Artwork of distillation apparatus used in 1799 in China to make an alcoholic rice drink called saut-choo. Saut-choo was made by concentra- ting the alcohol content of a fermented rice drink by heating it in a still. Alcohol is more volatile than water, so there is a greater concentration of it in the vapour than there is in the remaining fluid. The vapour was collected, cooled and condensed back into a liquid for consumption.
