Pancreas. Computer graphic of a cross-section through a human pancreas, the organ which produces digestive juices as well as enzymes which regulate the metabolism of sugar. Most of the pancreas is made of exocrine glands which secrete various digestive proteins (enzymes). These pass into the pancreatic duct (horizontal blue line), emptying into the small intestine (off to the left) to aid in the breakdown of carbohydrates, protein fragments & fatty acids. Tiny, isolated endocrine glands (Islets of Langerhans) release the hormones glucacogen and insulin into the blood. These control carbohydrate and fat metabolism. Insulin also controls blood sugar levels.
