Artist's Description

Beer testing. Female technician testing the fatty acid content of beer using liquid-liquid extraction. The techician is testing the temperature of the water-bath with a thermometer. During liquid-liquid extraction two non-mixing liquids are brought together to transfer a substance which is soluble in both. The soluble substance diffuses out of one into the other and can then be usefully extracted.
