Patrick McGovern. Dr Patrick McGovern, an archaeo- logist at the University of Pennsylvania Museum, with a pottery jar used to store the world's most ancient wine. The jar was one of six found at Hajji Firuz Tepe, Iran, in the kitchen of a 7000- year-old mudbrick building. After excavation, this jar was reconstructed from fragments. Fragments from another jar were tested and found to contain wine residues. Different chemical tests revealed evidence of tartaric acid, a substance found only in large quantities in grapes. The residue also contained terebinth resin, a substance added to the wine as a preservative. This wine is 2000 years older than the next-oldest wine.
