Margarine is a butter-substitute that does not contain dairy fat, but is usually made from vegetable oils and skimmed milk. It was first produced commercially from the 1870s, with a variety of methods and ingredients. Artwork from the 25th volume (first period of 1900) of the French popular science weekly 'La Science Illustree'.
