Healthy eating. Pasta, dried pulses, and fresh fruit and vegetables. Pasta is a source of carbohydrate which the body breaks down to provide energy. Green leafy vegetables, such as broccoli and spinach, are high in vitamins C, E and K and contain pantothenic acid, in addition to iron and magnesium. Carrots are an excellent non-animal source of vitamin A. Potatoes, as well as providing carbohydrate, are a source of niacin. Pulses such as beans and lentils contain protein. Fruit and vegetables also contribute to dietary fibre requirements. Garlic, most especially its oil, is used extensively in herbal medicine as well as in the cuisine of most countries.
